Ingredients
- 1+ ½ cup warm water
- ¼ + 2 t cup sugar
- 2 T powdered yeast
- 6 cups Flour
- 2 t Salt
- ¼ cup honey
- 2/3 cup neutral oil
- 2 eggs 1 for egg wash, optional
- 1 pinch ground cardamom optional

Instructions
- Combine yeast with 1 cup warm water, 2 t sugar and leave to prove for 5 minutes
- Mix flour, salt, ¼ cup of sugar (+cardamom?) in the bowl of a stand mixer
- Mix together remaining water, honey, oil and eggs
- Add yeast mix and wet ingredients to the flour and just combine
- Using the dough hook knead at low speed until smooth and not sticky. Add a little flour if needs be.
- Divide the dough in half and set each in an oiled bowl, covered until doubled in size
- Divide each mound of dough into three and roll each ball into a log some 12” long. Braid the loaves
- Make a wash with the egg yolk, 1 T of honey and 1 T water and brush loaves
- Bake at 190 C for 20-25 minutes until the challah is golden and baked through.
