  1. Combine yeast with 1 cup warm water, 2 t sugar and leave to prove for 5 minutes
  2. Mix flour, salt, ¼ cup of sugar (+cardamom?) in the bowl of a stand mixer
  3. Mix together remaining water, honey, oil and eggs
  4. Add yeast mix and wet ingredients to the flour and just combine
  5. Using the dough hook knead at low speed until smooth and not sticky. Add a little flour if needs be.
  6. Divide the dough in half and set each in an oiled bowl, covered until doubled in size
  7. Divide each mound of dough into three and roll each ball into a log some 12” long. Braid the loaves
  8. Make a wash with the egg yolk, 1 T of honey and 1 T water and brush loaves
  9. Bake at 190 C for 20-25 minutes until the challah is golden and baked through.
