Ingredients
- 1 x 418 G tin of red salmon or left over cold salmon
- ½ level t mace
- ¼ level t cayenne pepper
- Salt and black pepper
- 275 G mashed potato to which 2 level T mayonnaise has been added
- 2 T lemon juice
- 4 anchovies mashed
- 2 hard boiled eggs
- 6 cornichons
- 2 heaped T capers
- 2 heaped T Parsley
- Neutral oil for frying

- 1 egg beaten
- 75 G matzo meal
- Oil for frying

Instructions
- Combine all the main ingredients in a processor and pulse to a coarse mix. Season to taste with salt and pepper
- Form into a long roll some 2 ½” in diameter and chill a little
- Cut the roll into 12 slices checking the shape for roundness. Dip into the beaten egg and then coat with matzo meal. Fry in a mixture of oil and butter for some 4 minutes on each side.
- Drain and serve
