- 175 G golden caster sugar
- 3 large egg whites
- 1 lb fresh strawberries hulled and halved
- I heaped T. icing sugar
- 570 mls double cream

Instructions
- Pre-heat oven to 150 degrees C
- Whisk egg whites to a stiff peak
- Add caster sugar a tbsp. at a time whisking in thoroughly
- Place rounded tbspfuls on a lined baking tray
- Place tray in oven and immediately turn heat down to 140 degrees C
- Bake for 1 hour, turn oven off and leave meringues in oven to dry out overnight
- Whizz half the strawberries in and sieve to remove the seeds
- Whip cream till floppy
- When ready break up meringues in a bowl, add chopped strawberries and fold in cream.
- Fold in a little of the puree and serve topped with what remains.
