Instructions
Pre-heat oven to 150 degrees C
Whisk egg whites to a stiff peak
Add caster sugar a tbsp. at a time whisking in thoroughly
Place rounded tbspfuls on a lined baking tray
Place tray in oven and immediately turn heat down to 140 degrees C
Bake for 1 hour, turn oven off and leave meringues in oven to dry out overnight
Whizz half the strawberries in and sieve to remove the seeds
Whip cream till floppy
When ready break up meringues in a bowl, add chopped strawberries and fold in cream.
Fold in a little of the puree and serve topped with what remains.
