Ingredients
- 2 lbs small cucumbers 4-5”
- 50 G Salt
- 3 cloves garlic lightly crushed
- 1-2 T whole black peppers
- One bunch fresh dill

Instructions
- Thoroughly clean the cucumbers
- Place garlic, pepper and dill in the bottom of a large glass jar and pack tightly with the cucumbers
- Combine salt + 1 L cold water and pour the brine over the cucumbers to cover, If needs be make more brine. Keep submerged
- Cover with a cloth and place jar in a cool dark space
- Check regularly and remove any mould or slime that may appear on the surface
- They should be ready in 7-14 days but this is a matter of personal taste
- When cucumbers are ready to eat either cover tightly or transfer to sterilised jars and refrigerate.
- The flavour will continue to evolve
