Ingredients
- 6 lamb shanks
- 6 medium sized onions
- Flour for dusting
- olive oil
Marinade
- 1 bottle of red wine
- 4 T sherry vinegar
- 2 whole heads of garlic cut horizontally
- 1 small bunch of thyme
- 3-4 bay leaves
- 1 t black peppercorns

Instructions
- Marinade the lamb in the wine with the garlic, vinegar, herbs and peppercorns for a few hours or overnight turning the meat from time to time
- Dust shanks with flour and in a large pan brown them in the olive oil. Remove and set aside
- Peel and chop the onions and soften them slowly in the same pan until deep gold and very soft adding more oil if needed
- Return the meat to the pan, pour over the marinade, cover and cook in oven at 200 C for some 2 hours
- Adjust seasoning to taste
