Marinade

bottle of red wine

whole heads of garlic
cut horizontally

small bunch of thyme

black peppercorns
Instructions
Marinade the lamb in the wine with the garlic, vinegar, herbs and peppercorns for a few hours or overnight turning the meat from time to time
Dust shanks with flour and in a large pan brown them in the olive oil. Remove and set aside
Peel and chop the onions and soften them slowly in the same pan until deep gold and very soft adding more oil if needed
Return the meat to the pan, pour over the marinade, cover and cook in oven at 200 C for some 2 hours
Adjust seasoning to taste
