Ingredients
Crust
- 2 cups digestive biscuits crushed
- 2 ozs melted butter
- ¼ cup crushed walnuts

- 24 ozs cream cheese
- 1½ cups sugar
- 5 eggs
- 3 tbsp lemon juice

- 1 pint sour cream
- ½ cup sugar
- 1 tsp vanilla extract

Instructions
- Preheat oven to 180 C, Combine ingredients and press evenly across the bottom and sides of a 10” spring form pan
- Combine cream cheese and sugar and add eggs one at a time beating thoroughly after each one.
- Beat in lemon juice. Pour filling over crust and bake for 45 minutes without opening the oven door. Remove cheesecake and reduce heat to 150 C
- Mix ingredients and spread over cheesecake. Bake for further 15 minutes. Cool fully and refrigerate overnight.
