Ingredients
- 2 lbs white fish skinned boned and cut into portions
- Haddock cod, hake, plaice, sole are all suitable
- 2 eggs beaten
- Medium matzo meal for dredging
- salt and pepper
- Neutral oil for frying

Instructions
- Place seasoned matzo meal in a dish and the beaten egg in another
- Make sure the fish is dry. Then dip first into the egg and then into the matzo meal
- Fry for about 5 mins on each side until cooked through and golden
- Drain and serve
Recipe Notes
Eat hot but believe it or not the fish is delicious eaten cold and makes a wonderful sandwich. Add mayonnaise, ketchup, salad stuff, coleslaw…….
