Ingredients
- 3 eggs separated
- 100 G soft butter
- 100 G caster sugar
- 1 t lemon zest
- 125 G plain flour
- ½ t baking powder
- 1 cupful sliced ripe plums

Instructions
- Cream butter + sugar to pale. Add egg yolks and zest
- Add flour and baking powder
- Beat egg whites to stiff and fold in carefully with a metal spoon
- Prepare a 9” tin and spread the batter in it.
- Arrange plums skin side down on top of the batter
- Bake at 190 C for 40 mins or until cake tests ready
- Cool
