cupful sliced ripe plums
Instructions
Cream butter + sugar to pale. Add egg yolks and zest
Add flour and baking powder
Beat egg whites to stiff and fold in carefully with a metal spoon
Prepare a 9” tin and spread the batter in it.
Arrange plums skin side down on top of the batter
Bake at 190 C for 40 mins or until cake tests ready
Cool
