Ingredients
- 2 T good olive oil
- 2 large onions
- 1 t chopped fresh thyme leaves
- 2 t Salt
- 3 T Worcester sauce
- 1 t Black pepper
- 1/3 cup chicken stock
- 1 T tomato paste
- 2½ lbs best beef mince
- ½ cup dry breadcrumbs
- 2 extra-large eggs beaten
- ½ cup tomato ketchup

Instructions
- Sauté chopped onion, thyme, salt and pepper in olive oil until onions are translucent but not brown
- Remove from heat and add the Worcester sauce, the stock and the tomato paste. Cool slightly
- Combine the mince, onion mixture, eggs and breadcrumbs and mix lightly with a fork or your fingers
- Shape the mix into a rectangular loaf on a sheet of greaseproof paper on a baking tray and spread the ketchup evenly over the top
- Bake for 60-75 minutes for 60 to 75 minutes until cooked through
