LEMON TART (Oliver Lewis)
Instructions
  1. Line a 10” round baking tin with greaseproof paper
  2. Emulsify lemon juice, sugar and eggs in a processor for about 1 minute
  3. Line pan with thinly rolled pastry or five sheets of phyllo
  4. Pour lemon mix into pastry shell and arrange knobs of butter on top
  5. Bake at 180 degrees for 30 minutes
  6. Sprinkle with brown sugar and bake for a further 5 minutes.
  7. Allow to cool before serving
