                - Line a 10” round baking tin with greaseproof paper
- Emulsify lemon juice, sugar and eggs in a processor for about 1 minute
- Line pan with thinly rolled pastry or five sheets of phyllo
- Pour lemon mix into pastry shell and arrange knobs of butter on top
- Bake at 180 degrees for 30 minutes
- Sprinkle with brown sugar and bake for a further 5 minutes.
- Allow to cool before serving
