Ingredients
- 4 large potatoes
- 1 large onion grated
- Cooking oil
- 2 eggs beaten
- 2 T Medium matzo meal
- 2 t Salt
- ½ t Black pepper

Instructions
- Grate potatoes into cold water to prevent them going brown and leave for an hour or so. Drain and squeeze dry before using.
- Add matzo meal, eggs, onion and seasoning
- Drop spoonfuls into hot oil, flatten with a spoon
- Fry 3-4 mins each side till golden with crispy edges.
- Dry on absorbent kitchen paper.

Eat hot with apple sauce or sour cream. There are dozens of variations. This is basic and classic.
