Instructions
Grate potatoes into cold water to prevent them going brown and leave for an hour or so. Drain and squeeze dry before using.
Add matzo meal, eggs, onion and seasoning
Drop spoonfuls into hot oil, flatten with a spoon
Fry 3-4 mins each side till golden with crispy edges.
Dry on absorbent kitchen paper.
