Instructions
  1. Put the sugar into 300 mls water and boil for 5 minutes, dissolving the sugar. Add the lemon zest and leave to infuse for 15 minutes
  2. Strain into a jug and add the lemon juice, tonic water, gin to 1200 mls.
  3. Soak the gelatine in cold water for 5 minutes to soften. Meanwhile warm 250 mls of the G&T mixture to hot but not boiling. Squeeze out gelatine leaves and add to hot liquid to dissolve
  4. Stir this mixture into the rest of the liquid and once dispersed pour it into a mould and leave to set.
Recipe Notes

To make a vodka and lime jelly substitute 6 limes for the lemons and vodka for the gin
