Ingredients
- 20 slices sashimi salmon
- 20 slices smoked salmon
- 5 in small cucumbers strips
- 2 avocados sliced
- 1 whole lettuce finely shredded
- 6 oz raw tuna finely sliced
- 2 sheets Nori rolled and cut into strips
- Sushi rice see below
- Black and white sesame seeds for decoration

Instructions
- Arrange the ingredients prettily on large dish
- Bring 250 G washed sushi rice to the boil in pan with 310 mls cold water.
- Bring to the boil and simmer on very low heat with a lid on for some 15 minutes.
- Remove from heat and let rice sit for a further 10 minutes.
- Stir in 2 T rice vinegar and set aside

Dressing
Whisk together 125 mls soya sauce, 30 mls rice vinegar, 15 mls olive oil, 2 T honey, 2 t wasabi powder and some black pepper
Have Japanese soy sauce, pickled ginger and wasabi paste available
