Ingredients
- 1 lb courgettes grated, sprinkled with salt and left to drain
- ½ cup chopped spring onions
- 1 small yellow onion grated
- ½ cup chopped fresh dill
- 4 T chopped flat leaved parsley
- ½ cup feta cheese crumbled
- 4 eggs slightly beaten
- 1 cup plain flour
- salt and pepper
- Olive oil for frying

Instructions
- Squeeze courgettes dry and add the onions, herbs, cheese, flour with salt and pepper to taste
- Drop heaped T of batter into the hot fat frying on one side for 2 mins and on the other for 3 mins
- Drain and serve
