CLASSIC BELLINI (Harry’s Bar, Venice)
Instructions
  1. Blitz the peaches to a puree
  2. Put 2 t of the puree in the base of each chilled champagne glass and pour in the Prosecco

The peach juice can be swopped for tangerine, strawberry or raspberry juice perhaps helped by a single drop of orange blossom water in each glass
