In a 2lb bread tin dissolve sugar and water and heat to form a caramel. Whilst liquid tilt the tin so that the bottom and some pf the sides are coated with the caramel. Leave to set
Mix eggs, milk, vanilla essence, and sugar.
Crumble bread into the mix. Add fruit if using
Pour into pan and bake in oven at 200 C for 15 -20 mins until bread is browned and crisp and custard is set
