Ingredients
- 1 lb Brussels sprouts trimmed and the base marked X
- ½ cup double cream
- 2 T unsalted butter
- 1½ t Salt
- ½ t ground black pepper
- ¼ t freshly ground nutmeg

Instructions
- Cook the sprouts in boiling water for about 6-8 minutes until just tender and still bright green
- Heat cream and butter, add salt, pepper and nutmeg and add to sprouts
- Blitz to a coarse mixture and serve
