  1. Pre-heat oven to 200 C and line baking tin with paper
  2. Mix apples, pecans, brown sugar, cinnamon and flour
  3. Roll out pastry to a rectangle some 12” by 9”
  4. Mark pastry very lightly into thirds lengthwise
  5. Using a sharp knife make horizontal cuts 1” apart along the two outer segments
  6. Spread apple mix down central segment leaving about ½” at either end
  7. Fold top ½” down over the filling. Then fold the first right hand strip over the filling at a slight angle, followed by the left. Continue in this way to form a plait folding up and tucking in the bottom flap
  8. Transfer strudel to the baking tray, brush with the beaten egg, sprinkle with coarse sugar and bake for 15- 20 mins until golden brown
