Pre-heat oven to 200 C and line baking tin with paper
Mix apples, pecans, brown sugar, cinnamon and flour
Roll out pastry to a rectangle some 12” by 9”
Mark pastry very lightly into thirds lengthwise
Using a sharp knife make horizontal cuts 1” apart along the two outer segments
Spread apple mix down central segment leaving about ½” at either end
Fold top ½” down over the filling. Then fold the first right hand strip over the filling at a slight angle, followed by the left. Continue in this way to form a plait folding up and tucking in the bottom flap
Transfer strudel to the baking tray, brush with the beaten egg, sprinkle with coarse sugar and bake for 15- 20 mins until golden brown
