  1. Process butter, onion, garlic, mushrooms, sage, zest and breadcrumbs to a coarse mix. Add the mince and mix well.
  2. Lie the turkey breast down and place the stuffing in the mid-line.
  3. Fold turkey back to its original shape and secure all openings either with roasting pins or by sewing.
  4. Roast, on a rack. at 190 C for 3 hours covering breast with foil if it browns too quickly.
  5. Cool and slice. Serve hot or cold with Cumberland sauce.
