Ingredients
- Olive oil for frying
- 120 mls good olive oil
- 2 x 300 G sirloin steaks
- 3 garlic cloves crushed
- 406 sprigs rosemary
- 2 strips lemon peel
- Juice of 1 lemon
- salt and pepper

Instructions
- Season steaks with salt and pepper and fry in olive oil for 3-4 minutes on each side until cooked to taste. Set aside
- Add the rest of the oil to the pan and add the garlic, the rosemary, the lemon peel and allow to infuse in the now warm oil
- Add the lemon juice then strain adding any meat juices that may have appeared
- Slice the steaks thinly (0.5 cms). Season to taste and pour over ½ the dressing
- Season the rocket with salt and the remaining dressing and compose your salad finishing with parmesan flakes and perhaps some salt crystals
- Serve with horseradish sauce
