TAGLIATA with ROCKET and Parmesan Salad

Olive oil for frying

sirloin steaks

strips lemon peel
Juice of 1 lemon
salt and pepper
Instructions
Season steaks with salt and pepper and fry in olive oil for 3-4 minutes on each side until cooked to taste. Set aside
Add the rest of the oil to the pan and add the garlic, the rosemary, the lemon peel and allow to infuse in the now warm oil
Add the lemon juice then strain adding any meat juices that may have appeared
Slice the steaks thinly (0.5 cms). Season to taste and pour over ½ the dressing
Season the rocket with salt and the remaining dressing and compose your salad finishing with parmesan flakes and perhaps some salt crystals
Serve with horseradish sauce
