Ingredients
- 300 + 50 mls water
- 300 G caster sugar
- Zest and juice of 2 lemons
- 40 mls tonic water
- 250 mls gin
- 28 G gelatine leaves

Instructions
- Put the sugar into 300 mls water and boil for 5 minutes, dissolving the sugar. Add the lemon zest and leave to infuse for 15 minutes
- Strain into a jug and add the lemon juice, tonic water, gin to 1200 mls.
- Soak the gelatine in cold water for 5 minutes to soften. Meanwhile warm 250 mls of the G&T mixture to hot but not boiling. Squeeze out gelatine leaves and add to hot liquid to dissolve
- Stir this mixture into the rest of the liquid and once dispersed pour it into a mould and leave to set.
Recipe Notes
To make a vodka and lime jelly substitute 6 limes for the lemons and vodka for the gin
