Ingredients
- The grated zest and juice of one lemon
- 2 heaped T caster sugar
- 60 mls sweet wine
- A dash of brandy
- 300 mls double cream

Instructions
- Mix the caster sugar, lemon juice, zest, wine and brandy. The sugar should dissolve so heat a little if needs be. Then cool
- Whip the cream to soft peaks and fold into the liquid
- Pour into tall glasses and leave to rest. It will probably separate
