  1. Mix the caster sugar, lemon juice, zest, wine and brandy. The sugar should dissolve so heat a little if needs be. Then cool
  2. Whip the cream to soft peaks and fold into the liquid
  3. Pour into tall glasses and leave to rest. It will probably separate
