The grated zest and juice of one lemon

caster sugar

sweet wine
A dash of brandy

double cream
Instructions
Mix the caster sugar, lemon juice, zest, wine and brandy. The sugar should dissolve so heat a little if needs be. Then cool
Whip the cream to soft peaks and fold into the liquid
Pour into tall glasses and leave to rest. It will probably separate
