Ingredients: 2 ripe pears each (cut into 6 segments); 2 balls stem ginger (finely sliced); 2 handfuls rocket leaves; 12 sprigs fresh thyme; 1 handful coriander leaves (roughly chopped ); 12 slices Parma ham; 2 T stem ginger syrup; Zest of 2 lemons; Juice of 1 lemon; 2 T olive oil; 1 T vodka; Salt and Black Pepper

Lemon vodka dipping sauce

2 T stem ginger syrup
Zest of 2 lemons
Juice of 1 lemon
2 T olive oil
1 T vodka
Salt and black pepper

Instructions

Combine dressing ingredients and chill
Top each pear segment with slices of ginger, a little rocket and a sprig of thyme
Wrap this in a slice of Parma ham and serve with chilled dipping sauce.
