PARMA HAM wrapped pear, stem ginger and rocket rolls with a vodka dipping sauce

cut into 6 segments

balls stem ginger
finely sliced

handfuls rocket leaves

sprigs fresh thyme

handful coriander leaves
roughly chopped

Parma ham
Lemon vodka dipping sauce

stem ginger syrup
Zest of 2 lemons
Juice of 1 lemon

Salt and black pepper
Instructions
Combine dressing ingredients and chill
Top each pear segment with slices of ginger, a little rocket and a sprig of thyme
Wrap this in a slice of Parma ham and serve with chilled dipping sauce.
