Ingredients
- 1 x 3-4lb chicken
- Salt and black peppercorns
- 3 bay leaves
- 2 -3 large onions sliced
- 3 large carrots roughly chopped
- 2 lbs small new potatoes
- 2 ozs butter or margarine
- 2 T neutral oil

Instructions
- Strew the onions, carrots, peppercorns and bay leaves in the bottom of a large casserole dish. Season with salt to taste and add the oil
- Place the chicken on top of this and surround with the little potatoes.
- Scatter over the butter or margarine
- Roast covered at 180 C for about an hour until everything is cooked through
- Take a carving knife to the chicken and serve with the vegetables and the pan juices
