MOTHER’S ROAST CHICKEN

Ingredients

chicken
Salt and black peppercorns

bay leaves
2 -3
large onions sliced
3
large carrots roughly chopped
2
lbs
small new potatoes

ozs
butter or margarine

neutral oil
Instructions
Strew the onions, carrots, peppercorns and bay leaves in the bottom of a large casserole dish. Season with salt to taste and add the oil
Place the chicken on top of this and surround with the little potatoes.
Scatter over the butter or margarine
Roast covered at 180 C for about an hour until everything is cooked through
Take a carving knife to the chicken and serve with the vegetables and the pan juices
