MOTHER’S ROAST CHICKEN     
Instructions
  1. Strew the onions, carrots, peppercorns and bay leaves in the bottom of a large casserole dish. Season with salt to taste and add the oil
  2. Place the chicken on top of this and surround with the little potatoes.
  3. Scatter over the butter or margarine
  4. Roast covered at 180 C for about an hour until everything is cooked through
  5. Take a carving knife to the chicken and serve with the vegetables and the pan juices
