Ingredients
- 225 G Gchestnut mushrooms
- 80 mls extra virgin olive oil
- 1 t Maldon salt to taste
- Zest and juice of one lemon
- 1 clove of garlic crushed
- Leaves of 4 sprigs of fresh thyme
- 500 G linguine
- 1 bunch fresh parsley chopped
- 2-3 T freshly grated parmesan
- Freshly ground black pepper

Instructions
- Slice mushrooms finely and place in a bowl with the oil, salt, garlic, lemon juice and zest and thyme leaves
- Cook the linguine in accordance with the packet instructions. Drain, loosely, reserving some water
- Add pasta to contents of the bowl
- Toss together well. Add parsley, grated cheese and pepper. Add a little of the pasta water should the mixture prove too sticky. Check seasoning and serve.
