                - 4 medium potatoes peeled and grated into long shreds
- 4 T chopped chives
- 2 t Salt
- Black pepper
- 1 oz butter
- 2 T Vegetable oil

    Instructions
    
                - Working quickly combine the potatoes chives salt and pepper
- Heat the butter+the oil in a frying pan
- Drop about 2T of the mix into the hot fat flattening out with spatula to about a 3” pancake
- Fry for 2-3 minutes on each side until crisp and golden
- Serve at once
