LACEY POTATO PANCAKES with Chives

Ingredients

medium potatoes
peeled and grated into long shreds

chopped chives

Salt
Black pepper

butter

Vegetable oil
Instructions
Working quickly combine the potatoes chives salt and pepper
Heat the butter+the oil in a frying pan
Drop about 2T of the mix into the hot fat flattening out with spatula to about a 3” pancake
Fry for 2-3 minutes on each side until crisp and golden
Serve at once
