Ingredients

eggs well beaten

water plain or fizzy

schmaltz or chicken fat
salt and pepper

Medium matzo meal
Instructions
Combine eggs, fat, salt and pepper and gradually add the matzo meal. Cover and refrigerate for at least an hour
Bring a large quantity of water to the boil
With wet hands and using about 2 T at a time form mix into balls and drop them into the hot water. Simmer covered for about 30 mins. Remove and pray

Serve in hot chicken soup
Makes about 16 balls
