Ingredients
- 2 ripe pears each cut into 6 segments
- 2 balls stem ginger finely sliced
- 2 handfuls rocket leaves
- 12 sprigs fresh thyme
- 1 handful coriander leaves roughly chopped
- 12 slices Parma ham

Instructions
- Combine dressing ingredients and chill
- Top each pear segment with slices of ginger, a little rocket and a sprig of thyme
- Wrap this in a slice of Parma ham and serve with chilled dipping sauce.
