Ingredients
- 2 lbs best beef mince
- Medium matzo meal
- 4 eggs + 3 eggs hard boiled and peeled
- 2 large onions roughly chopped
- salt and pepper
- 5 bay leaves

Instructions
- In a processor pulse the onions, 4 eggs and meat to coarse.
- Season with salt and pepper and add matzo meal to produce a firm but soft mix
- Take half the mix and form it into a large ovoid shape on a greased/lined baking tray
- Place the 3 hardboiled eggs in a line down the middle and cover with the remaining meat mix to form an oval loaf
- Decorate the top with the bay leaves
- Bake for an hour or so at 190 C
Recipe Notes
Serve hot but cold is also delicious, particularly in a sandwich. Even more delicious if made with minced chicken. Small ones make excellent picnic food.
