In a processor pulse the onions, 4 eggs and meat to coarse.
Season with salt and pepper and add matzo meal to produce a firm but soft mix
Take half the mix and form it into a large ovoid shape on a greased/lined baking tray
Place the 3 hardboiled eggs in a line down the middle and cover with the remaining meat mix to form an oval loaf
Decorate the top with the bay leaves
Bake for an hour or so at 190 C
Recipe Notes
Serve hot but cold is also delicious, particularly in a sandwich. Even more delicious if made with minced chicken. Small ones make excellent picnic food.
