- 2 large cucumbers 8”
- 1 T Salt
- ½ cup white vinegar
- ½ oz caster sugar
- 1 t Salt
- ¼ t white pepper
- 2 T chopped fresh dill

Instructions
- Score cucumbers lengthwise with a fork and slice VERY thinly on a mandolin.
- Arrange in a shallow layer in a glass dish and sprinkle with 1 T salt
- Leave for some 2 hours and then drain off all the liquid, patting cucumbers dry with paper towels.
- Whisk together the vinegar, sugar, t salt and pepper. Check the seasoning
- Pour over cucumbers and strew with dill
- Chill for 2-3 hours and drain away liquid before serving,
