Ingredients
- 60 G salted butter
- 1 oz caster sugar
- 1 t Salt
- 6 T water
- 6 T white vinegar
- 4 T redcurrant jelly
- 2 T grated apple
- 1 t cinnamon
- 1 medium head red cabbage about 2-2 ½ pounds

Instructions
- Wash cabbage and discard tough outer leaves. Cut away the core and slice cabbage very finely into 1/8th to ¼” strips.
- Combine butter, sugar, salt, water and vinegar in a heavy pot and bring to the boil.
- Add the shredded cabbage, toss thoroughly and bring back to the boil.
- Cover tightly and place in centre of oven (at 160 degrees C)
- Cook for 2 hours checking liquid level from time to time and adding a little water if necessary.
- About 10 mins before finished stir in the jelly and the apple. Replace cover and continue cooking.
