medium head red cabbage
about 2-2 ½ pounds
Instructions
Wash cabbage and discard tough outer leaves. Cut away the core and slice cabbage very finely into 1/8th to ¼” strips.
Combine butter, sugar, salt, water and vinegar in a heavy pot and bring to the boil.
Add the shredded cabbage, toss thoroughly and bring back to the boil.
Cover tightly and place in centre of oven (at 160 degrees C)
Cook for 2 hours checking liquid level from time to time and adding a little water if necessary.
About 10 mins before finished stir in the jelly and the apple. Replace cover and continue cooking.
