large ripe peaches

sweet white wine

clear honey

vanilla pod split
Instructions
Place peaches in a bowl of boiling water for 30 secs and then plunge them into cold water. Remove the skins
Heat the wine, honey and vanilla together in a large pan
Add the peaches and simmer slowly for 15-20 minutes until the peaches are tender but not soft, turning often. Remove and set aside in a large bowl
Reduce the syrup to half and spoon over the fruit
