ripe apricots

strips unwaxed lemon peel
Juice of ½ lemon

vanilla pod
3
sprigs of thyme
2-3

clear honey
Double cream or crème fraiche to serve
Instructions
Preheat oven to 190 C. arrange all the ingredients in an appropriate oven dish as a single layer
Bake for 20-25 minutes basting with their juice half way through.
Serve at room temperature.
