salt-cured fresh ham

mustard

breadcrumbs

Instructions
Soak ham in cold water overnight
Pre-heat the oven to 125 C and insert a meat thermometer into the thickest part of the ham. Leave it in the oven until the thermometer reaches 75 C
Carefully remove the rind and however much fat you wish
Combine the egg, sugar and mustard and spread over the ham. Sprinkle over the breadcrumbs
Bake the ham for a further 10 mins until the breadcrumbs are golden
Decorate with the cloves
Serve with apple sauce, Swedish mustard or prunes.

Also good with potatoes and braised red cabbage.
