medium potatoes

of garlic

red wine vinegar

olive oil

of the water from cooking the potatoes

Salt
Instructions
Boil the potatoes until soft.
In a food processor combine the water, potatoes, olive oil, garlic, vinegar and season with salt. Blend till just smooth.
Recipe Notes
The potatoes should be blended whilst hot or it won’t work.
You can also mash it all.
