Ingredients
- 8 oz self-raising flour
- 5 oz sugar brown or white
- 2 eggs
- ¼ t bicarbonate of soda
- ½ t Salt
- 3-4 over ripe bananas
- Chopped nuts optional

Instructions
- In a processor mix the above ingredients until just combined
- Pour into a prepared 2 lb loaf tin and bake on bottom shelf for 45 minutes at 180 C
- Leave to cool
