Instructions
  1. Soak chickpeas in the cold water overnight. Next day drain, add the baking soda and boil for 20-40 mins till soft but not mushy
  2. Process to a stiff paste. Then, with the machine sill running, add the tahini paste, lemon juice, garlic, and 1 ½ t salt. Finally, slowly drizzle in the ice water and allow it to mix for about five minutes, until you get a very smooth and creamy paste
  3. Leave to rest for 30 mins. Refrigerate. Pour over a layer of good olive oil.
